Fabio Flagiello is well-known in Boulder circles. First, Fabio is a chef. A native of Trieste in Northeast Italy, Fabio trained at an early age at home, and then attended the prestigious Ecole Lenotre Culinary School in Paris, France. He owned several restaurants in California including one that was named one of the Michelin Guide’s Top 50 Restaurants in the San Fransico Bay area. After moving to Boulder to serve as Executive Chef of Bacaro, he opened Pastavino. But he’s just getting started.
If you don’t know Fabio because of his Boulder culinary connection, you probably know him through the Boulder cycling community! A former triathlete, he’s now a pure cyclist and joins local riding groups several times a week. Or simply find him at the North Boulder Amante drinking coffee on any given morning.
If you still don’t know Fabio, you should probably meet him. He’s a tall, charming, funny guy. He’s got more stories than you can imagine from a lifetime of cooking for presidents and professional cycling teams. He’ll meet you, and remember you (and what kind of bike you have) in the most genuine and heartwarming way.
And now he’s leading a new tour company called Fabio Tours that combines his three passions – Italian cycling, cuisine and culture. With 5 vacation tours on the schedule for Fall 2017, Fabio will welcome guests to his native Italy to cycle along winding roads and epic climbs. But most importantly, he will welcome his guests to his table with home cooked gourmet meals every night.
